METHOD OF TRAINING :Pergola Veronese e Guyot exposure: North/east –south
GRAPE VARIETY: Corvina, Corvinone, Rondinella
HARVEST: by hand into crates
VINIFICATION: Crushing and destemming, Fermentation at a controlled temperature ( 24-26 °) with maceration for 6-8 days. After few rackings the aging is in stainless steel vats.
SENSORIAL FEATURES : Lively ruby red colour, consistent. Elegant bouquet with hints of cherry and fresh violets. The palate is balanced, soft, persistent with a pleasant sweet fruit aftertaste.
SERVING SUGGESTIONS: First corse with meat, grilled meat. Recommended with Risotto with radicchio rosso di verona IGP and monte veronese cheese DOP
